Description
Vanilla extract (liquid) is an intense, sweet-caramel aroma with floral and woody notes; it most commonly appears as a dark brown or amber liquid soluble in alcohol or glycerin, clear and viscous. In small amounts, it contributes virtually zero macronutrients, so the calorie content is minimal, and the health benefits mainly come from the presence of aromatic compounds with antioxidant and stress-relieving properties — however, it is worth noting the alcohol content in typical commercial extracts. Culinarily, vanilla extract is versatile: it enhances baked goods, creams, ice creams, fruit desserts, coffee, and cocktails, and pairs well with chocolate, citrus, and spices. It should be stored tightly closed in a cool, dark place away from light and heat sources; an opened bottle retains its aroma for many months, and if necessary, it can be kept in the refrigerator, avoiding contact with children due to the alcohol content.
