Béarnaise sauce
Description
Béarnaise sauce is a classic French emulsified sauce with a creamy, light yellow color and silky texture, fragrant with tarragon, shallots, and malt vinegar; the flavor is buttery-egg with a distinct herbal note of tarragon and a slightly acidic finish. It pairs especially well with red meat (steaks), grilled fish, vegetables such as asparagus, eggs, and as a finishing touch for delicate potato dishes or steaks. Nutritionally, it is high in calories and rich in saturated fats and cholesterol due to the butter and egg yolks, also providing fat-soluble vitamins (A, E) and aiding in the absorption of fat-soluble substances; it is advisable to use it sparingly in a balanced diet. It is best prepared fresh and stored in a sealed container in the refrigerator for up to 48–72 hours, gently reheating in a water bath; freezing is not recommended due to the separation of the emulsion.
