Description
Jalapeño (fresh) is a medium-sized pepper with a smooth, shiny skin that is usually green, gradually turning red over time, with an oval, slightly conical shape. It has a distinct, fresh vegetable flavor with moderate spiciness — hotter than sweet pepper but milder than habanero — which gently subsides after cooking. Nutritionally, it provides a low number of calories, a good amount of vitamin C, vitamin A, and fiber, as well as capsaicin, a compound with anti-inflammatory properties that boosts metabolism and may alleviate pain. Culinarily, jalapeño is suitable for salsas, guacamole, tacos, marinades, grilled and baked dishes; it can be stuffed, pickled, or added to soups and stews to add freshness and heat. Store fresh jalapeño in the refrigerator in a perforated bag for about 1–2 weeks; keep cut ones in an airtight container and use within a few days. To extend shelf life, they can be frozen or preserved.
