Description
Capers are small, green-olive flower buds of the caper bush, most often pickled in salt or vinegar, with an intense, spicy-salty, slightly citrus-floral flavor and a firm, meaty texture. They are low in calories, providing trace amounts of protein, fiber, vitamin K, and minerals, and due to their content of flavonoids and antioxidants, they may support the body's anti-inflammatory mechanisms; however, it is worth remembering the high sodium content in canned versions. In the kitchen, capers wonderfully enhance sauces, salads, fish, pasta dishes (e.g., puttanesca), meats, as well as dressings and spreads, adding a distinctive saltiness and acidity. Once opened, store them in the refrigerator submerged in their original liquid and tightly sealed, using a clean spoon, and keep the unused jar in a cool, dark place before opening.
