Zucchini flowers
Description
Zucchini flowers are delicate, widely spread cups with a vibrant yellow-orange color and thin, silky petals, with a mild, slightly sweet, floral taste and a subtle vegetable note. They are low in calories, providing vitamins A and C, folic acid, potassium, and fiber, as well as antioxidants, which support immunity, skin health, and digestion. In the kitchen, they work perfectly stuffed with ricotta or cheese, breaded and fried ("fiori di zucca"), in omelets, pasta, salads, and soups, where they introduce a delicate, aromatic note. They should be stored unwashed in the refrigerator, wrapped in a paper towel and placed in a breathable bag, best used within 1-2 days; they can also be blanched and frozen, but processed fresh petals lose their structure.
