Description
Microgreens, such as arugula or pea shoots, are small, delicate seedlings with thin stems and small, vividly colored leaves; arugula provides a spicy-nutty, slightly peppery flavor, while micro pea shoots are known for their sweet, fresh aroma. Their appearance is attractive — juicy green, sometimes purple, which adds finesse to dishes. Microgreens are very rich in vitamins (A, C, K), minerals, and antioxidants, often in higher concentrations than mature vegetables, supporting immunity, eye health, and the skeletal system, as well as having anti-inflammatory effects. They work well as a finishing touch for salads, sandwiches, soups, scrambled eggs, risottos, smoothies, and dishes with cheeses or citrus, adding freshness and texture. Store them in a cool place, without washing until use or very gently drying them, in a container lined with paper towels or in a breathable bag, at a temperature of 0–4°C; use within a few days to maintain crispness.
