Pumpkin seeds
Description
Pumpkin seeds (hulled pepitas or in shells) have a flat, oval shape and a greenish color when shelled or a gray-brown shell, and they have a mildly nutty, slightly sweet, and pleasantly crunchy taste. They are a rich source of plant protein, unsaturated fatty acids, fiber, and minerals such as magnesium, zinc, iron, and phosphorus, as well as vitamin E and antioxidants; they also contain tryptophan. Regular consumption may support heart health, glycemic balance, prostate and bone health, and have anti-inflammatory effects, positively influencing mood and sleep. In the kitchen, pumpkin seeds are great in salads, soups, bread, granola, pesto, and smoothies; they can be roasted with spices as a snack or added to muesli and grain dishes. Store them in an airtight container in a cool, dark, and dry place; for longer freshness, keep in the refrigerator or freezer, especially after roasting, to prevent the fats from going rancid.
