Description

Fennel seeds are small, elongated, greenish-brown, with a slightly oily surface and a characteristic sweet-anise, slightly peppery aroma. The taste is mildly sweet with hints of anise and fennel, pleasantly crunchy when toasted, which brings out the essential oils. In the kitchen, they pair well with fish and seafood, pork, sausages, breads and baked goods, salads, as well as preserves and pickles; they are also used in teas and spice blends (Italian, Indian, Middle Eastern). Nutritionally, fennel seeds are a source of fiber, essential oils (anethole), antioxidants, and minerals such as calcium, iron, magnesium, and potassium, which support digestion, reduce bloating, and provide trace elements with low calorie content. They should be stored in a tightly sealed container, in a cool, dark, and dry place; whole seeds retain their aroma for 1–2 years, while ground seeds quickly lose intensity and should be prepared just before use.
