Green asparagus
Description
Green asparagus has slender, light green stems topped with delicate, slightly scaly tips; the flavor is subtle, fresh, and slightly sweet with a hint of greenery, becoming soft and aromatic after a brief cooking process. They are low in calories, rich in fiber, folic acid, vitamins K, A, and C, as well as minerals such as potassium and iron; they also contain antioxidants and compounds that support digestion and heart and bone health, and due to their diuretic effect, they help regulate the body's water balance. Culinary uses include grilling, blanching, quick frying in a pan, adding to salads, pasta, soups, and egg dishes; they pair well with olive oil, butter, lemon, garlic, and parmesan, as well as with ham or smoked fish as a light accompaniment. To maintain freshness, store asparagus upright in a glass with a small amount of water in the refrigerator or wrap it in a damp towel and use within 3–5 days; do not wash before storing, trim the woody ends before preparation.
