Description
Spirit or wine vinegar is an acidic, clear liquid — spirit vinegar is usually colorless and sharp in taste, while wine vinegar has a golden or straw color and a milder, fruity aroma. From a nutritional standpoint, vinegar provides minimal calories and contains almost no fat or protein; its main active substance is acetic acid, which may support digestion, help control glucose levels after meals, and exhibit antibacterial properties. In the kitchen, it is used for marinades, vinaigrettes, pickling and preserving, balancing sweetness in sauces, deglazing pans, and enhancing the freshness of salads and soups; wine vinegar pairs best with fish, meat, and salads, while spirit vinegar is effective for pickling and preserving. It should be stored in a tightly sealed bottle, in a cool, dark place (cupboard or pantry); it does not need to be refrigerated after opening, and for longer storage, it is best to use glass or safe plastic, avoiding direct contact with delicate metals.
