Field cucumber
Description
Cucumber is a crunchy, refreshing vegetable with a juicy, mildly fresh taste and light green flesh, often with a darker, slightly rough skin. It contains few calories but a lot of water, vitamin K and C, potassium, and small amounts of fiber and antioxidants, which helps with hydration, supports digestion, skin health, and the circulatory system, and aids in weight control. In the kitchen, cucumber works great in salads, cold soups, tzatziki dips, sandwiches, and sushi, as well as a base for pickling or quick marinades. Store it in the refrigerator, preferably unwashed, in a perforated bag or wrapped in a paper towel in the vegetable drawer; cut cucumber should be kept in an airtight container and used within 1–2 days, avoiding long storage and contact with ethylene-releasing fruits.
