Parsley
Description
Parsley is an intensely green herb with a fresh, slightly peppery and sweet flavor; it comes in varieties with flat or curly leaves, with delicate stems and a root well known as root parsley. It is rich in vitamins C, K, and A, folic acid, iron, and antioxidants that support immunity, bone and blood health, and aid digestion and detoxification due to its chlorophyll and flavonoid content. In the kitchen, parsley works well as a garnish and flavoring ingredient in soups, sauces, salads, pesto, marinades, fish and poultry dishes, and in herb blends; it adds freshness to almost any dish. Store in the refrigerator wrapped in a damp paper towel or in a jar of water, changing the water every few days, and for longer storage, freeze finely chopped or keep in oil.
