Tomatoes (soft, flesh for salsa)
Description
Soft tomatoes intended for salsa pulp have an intense, sweet-and-sour flavor and a juicy, soft texture; their flesh is meaty, with numerous seeds and a vibrant red color, easily breaking down to give the salsa a creamy consistency with a distinct freshness. They are excellent for pico de gallo, gazpacho, sauces, and fresh salsas, as well as for sandwiches and bruschetta, where the balance of acidity and sweetness is important. Tomatoes are low in calories, rich in vitamin C, vitamin A (beta-carotene), potassium, folate, and fiber, and they also contain lycopene—a powerful antioxidant that supports heart health and reduces the risk of certain cancers. It is best to store them at room temperature away from direct light until use; once cut, keep them in an airtight container in the refrigerator and use within 2–3 days, and before serving, bring them back to room temperature for fuller flavor.
