Description

Gorgonzola Dolce is a creamy, soft blue cheese with a mild, slightly sweet flavor and a delicate spicy note. It has a light, buttery-cream structure with soft, blue-green veins of mold that are less intense than in the spicy version, making the cheese smooth and easy to spread. It pairs wonderfully with fruits, nuts, honey, and as an addition to sauces and baked dishes, giving them a velvety texture and refined aroma. Nutritionally, it provides protein, calcium, phosphorus, and vitamins A and B12, and the presence of mold cultures may support the gut microbiota; however, it is relatively fatty and salty, so it is best consumed in moderation. Store gorgonzola wrapped in parchment or special cheese paper in the refrigerator at a temperature of about 2–6°C, avoiding airtight containers that trap moisture, and use within about 1–2 weeks after opening.
