Fresh asparagus
Description
Fresh asparagus has a delicate, slightly nutty and green flavor, with slender stalks and firm tips; it comes in green, white, and purple varieties, differing in aroma intensity and texture. They are low in calories, rich in fiber, folic acid, vitamins K, C, A, and E, as well as minerals like iron and potassium, and also contain antioxidants and prebiotic inulin that support digestion and cardiovascular health. In the kitchen, they are great steamed, grilled, roasted, or quickly sautéed, pairing well with eggs, fish, poultry, risotto, salads, and light sauces based on lemon or butter. Store unwashed, wrapped in a damp cloth or standing in a glass of water in the refrigerator; best used within 3–4 days, and trim the woody ends before use.
