Description

Halloween Skewers — a light, impressive appetizer combining juicy cherry tomatoes, soft mozzarella, and aromatic basil, decorated with black olives as "eyes" and drizzled with olive oil and optional balsamic vinegar. The dish is simple to prepare, looks great on the plate (the contrast of the white mozzarella, red tomato, and black olive creates a dramatic effect), pairs well with bread, barley salad, or glasses of sparkling wine. It's the perfect seasonal snack for a Halloween party — quick, portable, and easy to serve in "spooky" shapes: ghosts, spiders, and eyes. Flavor-wise: fresh, slightly salty, with a spicy hint of pepper and a delicate sweetness from balsamic vinegar, if used.

Preparation steps

Preparation of ingredients

1

Prepare your workspace: lay out a cutting board, a sharp knife, a bowl for the dressing, paper towels, and a plate/platter for arranging the skewers. Remove the mozzarella from the brine and set it aside to drain in a colander for about 10 minutes. After draining, gently pat each ball dry with a paper towel so that the dressing adheres better.

Ingredients: Mozzarella
Use a small strainer and paper towels. Do not crush the mozzarella — just gently drain it; too moist mozzarella will slip off the stick.
2

Wash the cherry tomatoes under cold water and dry them. If you want to make 'mouths' or other shapes, cut some of the tomatoes lengthwise into thin wedges or make a shallow incision. For simplicity: cut half of the tomatoes in half, leaving a few whole for visual variation.

Use a sharp knife to avoid crushing the tomato skin. Remove excess juice from the halved tomatoes with a spoon if they are very juicy — this will prevent the mozzarella from getting soggy.

Preparing the dressing

3

In a small bowl, combine olive oil (30 g), salt (2 g), and freshly ground pepper (1 g). If using garlic (optional), crush 1-2 cloves with a knife, then finely chop or press through a garlic press and add to the oil. Whisk vigorously with a fork until the ingredients are combined. The dressing should be slightly oily with small pieces of garlic and pepper.

Ingredients: Olive oil, Salt, Black pepper, Garlic
Use a small bowl and a fork or mini whisk. If the dressing seems too intense (e.g., too sharp from the garlic), add 1-2 ml of water or more oil to mellow the flavor.

Preparation of decorative details

4

Prepare the olives as "eyes": if the olives have pits, pit them. Cut the olives into thin slices or halve them lengthwise to create small "eyes." Set the slices aside on a plate. Prepare the basil leaves — choose the most beautiful, whole leaves; you can chop the larger ones into small pieces to serve as 'fins' or 'wings.'

Ingredients: black olive, Basil
Use a sharp knife for thin slicing. If you want to create 'spiders', cut the olive in half and stick half on the sides of the tomato to form legs.

Assembly of the skewers

5

Take a stick and first skewer half a mozzarella ball (or the whole one if you are using mini). Then add a basil leaf folded into the shape of 'wings' or leave the whole leaf. Finally, skewer a cherry tomato (half or whole depending on the size you choose). On top, secure a slice of olive as an eye — if the skewer is meant to look like a ghost, place two small olives side by side as eyes in the soft mozzarella. Repeat, assembling 24 skewers (2 per person) or as many as you want to serve.

Ingredients: skewer, Mozzarella, Basil, black olive
Layer the ingredients in this order: mozzarella → basil → tomato. Insert the stick about 2/3 of the way down to keep the skewer stable. If the mozzarella is slipping, gently press it with the tip of a knife to create a small groove that will hold it in place.

Decoration

6

Arrange the finished skewers on a large platter so that they form groups of 'ghosts' and 'spiders' — for example, skewers with two olives as eyes can be placed close together. Drizzle each skewer evenly with the prepared dressing (use a teaspoon or a small kitchen brush). If you are using balsamic vinegar (optional), drizzle a small amount in a thin stream in the shape of a 'web' across the entire platter.

Ingredients: Olive oil, Balsamic vinegar
Use a teaspoon to evenly drizzle the oil. Add balsamic vinegar sparingly — it's better to add less and serve extra in a separate bowl.

Finishing and serving

7

Sprinkle lightly with freshly ground pepper. Check the taste of one skewer and if necessary, add a little salt. Arrange the skewers on a plate in an attractive way — you can add a few extra basil leaves between the skewers as a decorative element. Serve immediately at room temperature, preferably within 1-2 hours of preparation.

Ingredients: Black pepper, Basil
The best is slightly chilled mozzarella with tomatoes at room temperature — overly cold flavors are less pronounced. For serving, use a large, light-colored platter so the colors stand out well.

Cleaning and storage

8

After the party, store the remaining skewers in a closed container in the fridge for a maximum of 24 hours. Before serving, drizzle with oil again and possibly add more salt. Mozzarella may release liquid after some time — then the tomatoes will be soft, so it's best to prepare the skewers just before serving or store the ingredients separately.

Ingredients: Mozzarella
If you're planning to transport them to a party, pack the skewers tightly in a container and transport them in a cool place; add the dressing on site.

Fun Fact

💡

Skewers (snack kebabs) have their roots as practical party snacks — in Poland, they have gained popularity as quick bites for gatherings. Adding an olive as an 'eye' is a simple trick that visually appeals to everyone, and during Halloween, you can easily create 'ghost' and 'spider' themes.

Tips

🍽️ Serving

Serve on a light platter or against a black background for contrast. Fresh bread (baguette), arugula salad, or pearl barley with herbs pairs well with the skewers. Set small bowls with extra olives and balsamic vinegar next to them so guests can season to their liking.

🥡 Storage

Store in an airtight container in the refrigerator for up to 24 hours. Do not freeze. If you prepare the ingredients separately (mozzarella and tomatoes), you can assemble the skewers just before serving, which will ensure the best texture.
