Fish broth (or vegetable broth)
Description
Fish stock (or vegetable stock) is a clear, aromatic broth with a delicate, salty taste featuring umami notes in the case of fish stock and fresh vegetables and herbs in the vegetable version; its color ranges from light golden to amber, and its consistency is light and low-fat. Nutritionally, the stock mainly provides water and minerals such as sodium, potassium, calcium, or iodine (in fish stock), as well as proteins and collagen in smaller amounts; the vegetable version is low in calories and rich in water-soluble vitamins and antioxidants. Both support hydration, digestion, and electrolyte replenishment. In the kitchen, stock serves as a base for soups, sauces, risottos, one-pot dishes, and fish dishes, enhancing flavor without overpowering it. Store in the refrigerator for up to 48–72 hours in a sealed container after rapid cooling; it can also be portioned and frozen for up to 3 months, remembering to label and reboil before use.
