Fresh rosemary
Description
Fresh rosemary is an aromatic herb with dark green, needle-like leaves and woody stems that emit an intense, resinous-camphor scent with hints of pine and citrus. The flavor is bold, slightly bitter, and peppery, which is why it is used sparingly to avoid overpowering the dish. Nutritionally, rosemary provides antioxidants, vitamins (especially A and C), and minerals such as iron and calcium, while its bioactive compounds exhibit anti-inflammatory, antibacterial, and digestive-supporting properties. In the kitchen, rosemary pairs well with roasted meats (lamb, poultry, pork), potatoes, root vegetables, stews, marinades, and flavored oils; sprigs add aroma to sauces and bread. It is best stored in the refrigerator wrapped in a damp paper towel in an airtight container, where it will stay fresh for about a week, or it can be frozen/dried for longer use.
