Sugar onion
Description
Sugar onion is a mild, sweet variety of onion with a thin, light skin and juicy, creamy-white interior; it has a gentler flavor than yellow onion, almost without sharp bitterness, making it particularly pleasant to eat raw. It is low in calories and provides vitamin C, fiber, and sulfur compounds and flavonoids, such as quercetin, which exhibit anti-inflammatory and antioxidant effects, supporting the immune system and the circulatory system. In the kitchen, sugar onion works great in salads, sandwiches, salsas, and for quickly sautéed and grilled dishes; it caramelizes beautifully, gently enhancing sauces, soups, and dishes with fish or poultry. It is best stored in a cool, dry, and well-ventilated place outside the refrigerator, in individual cleaned pieces; once cut, it should be placed in an airtight container and stored in the refrigerator, to be used within a few days.
