Description
Chickpeas (garbanzo beans) are round, creamy or light yellow legumes with a subtly nutty, slightly earthy flavor and a soft, silky texture when cooked. They are a rich source of plant-based protein, fiber, folic acid, iron, and magnesium, have a low glycemic index, which promotes a feeling of fullness, stabilizes blood sugar levels, and supports gut health. Regular consumption may aid in weight management, lipid profile, and provide important micronutrients in a plant-based diet. Chickpeas work well in hummus, falafel, stews, curries, salads, and baked snacks, pairing nicely with citrus, tahini, cumin, and herbs. Store dry chickpeas in an airtight container in a cool, dry place, and cooked ones in the refrigerator for 3–4 days or freeze for up to 3 months; keep canned chickpeas in the pantry, and once opened, store in the refrigerator.
