Description
Cornstarch (maizena) is a fine, white powder with a completely neutral taste and a satin-like, slightly translucent consistency when cooked, commonly used as a flavorless thickener. Nutritionally, it consists mostly of starch — it is a source of quickly available carbohydrates with very low protein, fat, and mineral content, which means it provides energy but not vitamins or fiber; it naturally contains no gluten, making it useful in the diet of people with gluten intolerance (provided it is certified gluten-free). In the kitchen, maizena is excellent for thickening sauces, soups, creams, desserts, puddings, and for light batters and baking as an ingredient that improves the flakiness of pastries. To avoid lumps, it should first be dispersed in cold water or milk before being added to hot liquid. Store in an airtight container in a dry, cool place away from moisture and strong odors; when properly secured, it retains its properties for a long time.
