Black beans (cooked, drained)
Description
Cooked and drained black beans have a velvety, creamy texture with an earthy, slightly sweet flavor and a shiny, deep black skin that reveals a light center when crushed. They are a versatile ingredient with a pleasantly intense aroma that absorbs spices and sauces well. Nutritionally, black beans are a rich source of plant protein, fiber, complex carbohydrates, and micronutrients such as iron, magnesium, potassium, and folic acid. They contain antioxidants (anthocyanins), support feelings of fullness, regulate blood sugar levels, and positively impact heart health and gut microbiota. In the kitchen, they work well in soups, stews, salads, tacos, spreads, and plant-based burgers, as well as serving as a base for dips and fillings. After cooking, store the beans in an airtight container in the refrigerator for 3–5 days, preferably in a small amount of broth, or freeze in portions for up to about 3 months; cool and drain well before storing.
