Marinated herring fillets
Description
Marinated herring fillets have a distinct salty-sour taste with a hint of sweetness and the aroma of vinegar, onion, and spices such as allspice and bay leaf. The flesh is firm, slightly fatty, and tender, usually in the form of thin, shiny pieces with a creamy-pink interior. They are a source of high-quality protein and valuable unsaturated omega-3 fats (EPA and DHA), as well as vitamins D, B12, and selenium, which support the cardiovascular system, cognitive functions, and the immune system. In the kitchen, they work well as an appetizer and an ingredient in salads, open sandwiches, with potatoes, sour cream, apple, or beetroot, as well as in traditional snacks and spreads. They should be stored in the refrigerator in brine or an airtight container at a temperature of 0–4°C; once opened, consume within 3–5 days. Longer freezing is possible, but it deteriorates the texture.
