Mustard seeds
Description
Mustard seeds are small, round seeds ranging in color from yellow to brown to black, with a fresh, spicy-aromatic scent that is released most when crushed or toasted. In flavor, they combine nutty notes with a spicy, slightly bitter finish; in the kitchen, they are used both as an aromatic spice and as an ingredient in mustards, marinades, and spice blends. They are a good source of plant protein, fiber, minerals (calcium, magnesium, iron), and B vitamins, as well as oils and bioactive compounds with anti-inflammatory properties and digestive support. The seeds pair well with marinades, sauces, dressings, curries, bread, and meat and fish dishes; toasting enhances their aroma, while grinding them creates mustard. They should be stored in an airtight container in a cool, dark, and dry place; whole seeds retain freshness much longer than ground ones (up to several years), while powdered mustard loses its aroma after a few months.
