Description
Bitter chocolate with at least 85% cocoa has an intense, deep flavor with a distinct bitterness and subtle notes of nuts, dried fruits, and earth; its color is deep, almost black, with a sheen on the surface and a compact, crunchy texture when broken. It works perfectly as an ingredient in desserts that require strong cocoa — ganache, tarts, cakes, and pralines — as well as an addition to coffee, fruits, cheeses, or bold sauces in savory cooking. Nutritionally, it is rich in antioxidants (flavonoids), magnesium, iron, and healthy fats, with a relatively low sugar content, which can support heart health and mood with moderate consumption.
