Parsley root
Description
Root parsley is a fleshy, creamy-white root with a slightly orange-hued flesh, characterized by a herbal-parsley aroma and a mildly sweet, slightly peppery flavor reminiscent of a combination of carrot and leaf parsley. It is low in calories, rich in fiber, vitamin C, K, and folic acid, as well as minerals such as potassium and iron; it also contains antioxidant compounds and essential oils that aid digestion and have anti-inflammatory properties, which support gut function, the immune system, and help maintain normal blood pressure. In the kitchen, root parsley works wonderfully in soups, broths, and creams, as an ingredient in purees, roasted vegetable mixes, casseroles, and salads made from raw, grated root. To keep it fresh, store it unwashed in the refrigerator in a perforated bag or wrapped in a damp cloth, which will help it retain firmness for several weeks; for longer storage, it can be kept in a cool, dark pantry or blanched before freezing.
