Description
Cooked or roasted beetroot has a sweet-earthy, delicate flavor and a meaty, slightly creamy texture; when roasted, it gains a deeper sweetness, and its intense red-purple color beautifully contrasts with light accompaniments. It is low in calories, rich in fiber, folic acid, vitamin C, potassium, and nitrates, which can lower blood pressure and improve performance; betalains provide anti-inflammatory and antioxidant properties, supporting cardiovascular health. In the kitchen, it pairs well with salads, roasted vegetables with goat cheese or feta, creamy soups, hummus, carpaccio, and grain dishes, as well as being an ingredient in marinades or smoothies.
