Shelled peas
Description
Dried split peas have a fresh, slightly sweet, and subtly nutty flavor, along with a juicy, light green color (which may turn more olive after cooking), and when blended, they create a creamy consistency. They are rich in plant protein and fiber, providing B vitamins, vitamin C and K, as well as folic acid, and minerals such as iron, manganese, and potassium; regular consumption supports digestion, stabilizes blood sugar levels, improves the feeling of fullness, and positively affects the lipid profile. In the kitchen, dried split peas work well in cream soups, risottos, salads, pasta, spreads, and as a light addition to meat or fish dishes; they pair well with mint, lemon, and bacon. Store fresh peas in the refrigerator in a breathable container for up to 2–3 days, frozen peas maintain quality for several months, and dried (split, hulled) should be kept in a sealed, dry, and cool place.
