Split yellow peas
Description
Yellow split peas are firm, light yellow seeds with a slightly sweet, mildly nutty flavor and a matte surface after the hull is removed; when cooked, they become creamy and easily break apart, giving dishes a smooth consistency. They are a rich source of plant protein and fiber, providing complex carbohydrates, B vitamins (including folic acid), and minerals such as iron, potassium, and magnesium, while their low fat content supports satiety, blood sugar regulation, and heart health.
