Juniper (berries)

🌱 Vegetarian 🌿 Vegan

Description

Juniper (berries) are small, round fruits with a bluish-black hue and a slightly powdery surface; the taste is resinous-spicy with notes of pine, citrus, and a slight bitterness, providing a distinctive, pungent aroma. The berries are low in calories, contain fiber, vitamin C, minerals (including manganese), as well as antioxidants and essential oils that exhibit anti-inflammatory properties, aid digestion, and have moderate antibacterial activity; they should be used in moderation, avoiding large doses during pregnancy and in cases of kidney disease. In the kitchen, juniper pairs perfectly with game, pork, sauerkraut, marinades, sauces, and gin, enhancing heavier, fatty dishes and spiced compositions. Store whole berries in a sealed, dark, and cool place; ground berries lose their aroma quickly, so grind just before use; whole berries retain their aroma for up to 1–3 years.
