Pearl barley
Description
Pearl barley is a grain product with light yellowish, slightly pearly grains and a subtly nutty, mellow flavor with a soft yet slightly chewy texture when cooked. It resembles a larger, rounder groat; when cooked, it develops a creamy center and a shiny outer layer. It is rich in fiber, particularly beta-glucans, and contains B vitamins as well as minerals such as magnesium, phosphorus, and selenium, which support digestion, provide a longer feeling of fullness, and may lower cholesterol levels and stabilize blood sugar. In the kitchen, it works well as a base for salads, stews, soups, risottos, and side dishes instead of rice or groats, pairing nicely with vegetables, meat, and mushrooms, adding structure and depth of flavor to dishes. It should be stored in a dry, cool, and airtight container; dry grains stay fresh for many months, while cooked barley is best kept in the refrigerator for 3–4 days or frozen for longer storage.
