Kiwi: peel using a peeler or spoon and cut into slices about 1 cm thick, then cut each slice in half if they are large. Mango: cut alongside the large flat pit, peel the flesh with a knife and dice it into pieces similar in size to pineapple (about 2 cm). Total preparation time for bananas, kiwi, and mango: 6–7 minutes.
Prepare the sticks: if the sticks are raw and you're worried about splinters, soak them in cold water for 5–10 minutes, then dry them. This makes them more flexible and less brittle. Arrange all the prepared bowls with fruits on the countertop: pineapple, strawberries (halved if large), slices of kiwi, pieces of banana, grapes, and blueberries.
Stuffing and Shaping
Start assembling the skewers: hold the stick in one hand and the fruit in the other. Alternate the fruits by color and texture, e.g. a piece of pineapple (2 cm) — grape — slice of kiwi (half) — piece of mango — half a strawberry — slice of banana — blueberry. Each skewer should have 6–7 pieces of fruit and not be too tightly packed. Time to assemble one skewer: 1.5–2 minutes; total for 8 skewers: 12–16 minutes.
Yogurt dip (optional)
If you are using yogurt and honey: transfer 200 g of Greek yogurt to a small bowl, add 30 g of honey and mix with a spoon for 20–30 seconds until the mixture is smooth and slightly runny. Taste and add more honey if needed. Time: 2–3 minutes.
Chocolate glaze (optional)
If you want a chocolate glaze: break 100 g of chocolate into pieces and place it in a heatproof bowl. Set the bowl over a pot of gently simmering water (bain-marie). Stir the chocolate with a spatula every 30 seconds until it is smooth and shiny — this usually takes 3–5 minutes. Be careful not to let steam get into the chocolate (it can cause it to seize).
Finishing
Arrange the finished skewers on a large platter. If you prepared the glaze, use a spoon or a small kitchen brush to create thin swirls of chocolate on the skewers (1–2 teaspoons of chocolate per skewer).
