Description
Bamboo shoots are light yellow, crunchy sprouts with a delicate, slightly sweet and nutty flavor. They resemble thin, vegetable stalks cut into sticks or slices; they have a firm, juicy texture that retains its crispness after a brief cooking. They are low in calories, low in fat, and a source of fiber, potassium, B vitamins, and antioxidants, which support digestion, weight control, and heart health. In the kitchen, they work well in stir-fries, soups, salads, spring roll fillings, and curries, pairing excellently with soy sauce, ginger, garlic, sesame, meat, and tofu. Fresh ones can be stored in the refrigerator in water, changing it daily, or in an airtight container for about a week; they can also be blanched and frozen or used from canned and dried products after soaking.
