Description
Green onion, also known as scallion or spring onion, with its white stem and delicate green tops, has a fresh, slightly oniony flavor with a sharp yet subtle aroma. Its appearance is striking with intensely green tips and a white base; it can be used both raw and after a brief cooking process. It is low in calories, rich in vitamin K, vitamin C, folic acid, and fiber, as well as sulfur compounds and flavonoids (e.g., quercetin), which support immunity, have anti-inflammatory properties, and positively affect the circulatory system and bones. In the kitchen, it is perfect as a fresh addition to salads, sandwiches, soups, omelets, Asian dishes, and salsas, enhancing flavor without overpowering. It is best stored in the refrigerator wrapped in a damp paper towel and in a loose plastic bag or standing in a jar of water for a short time; use within a week.
