Napa cabbage kimchi
Description
Kimchi made from napa cabbage is a spicy-sour, slightly umami condiment with an intense red-orange hue and crunchy cabbage leaves. The aroma can be sharp from chili and garlic, while the texture combines juiciness with a delicate softness resulting from fermentation. It is low in calories, rich in fiber, and vitamins C and K, and thanks to natural fermentation, it contains probiotics that can support gut flora and digestion. In the kitchen, it works well as an appetizer, an addition to rice dishes, ramen, soups (e.g., kimchi jjigae), tacos, or sandwiches, giving dishes a bold flavor contrast. It is stored in a tightly sealed container in the refrigerator; it will continue to ferment, becoming increasingly sour, and retains good quality for several weeks, and with proper hygiene, even for several months.
