Ice (cubes)
Description
Ice in the form of cubes is transparent or slightly cloudy, hard and crunchy, flavorless except for the cooling, refreshing sensation; its crystalline structure visually enhances drinks and dishes. Nutritionally, ice cubes are simply water, virtually calorie-free and containing no fat or protein, and their main health benefit is rapid hydration of the body and lowering body temperature in the heat; however, it is advisable to use good quality drinking water to avoid contamination. Ice cubes are essential in bars and kitchens: they cool drinks, cocktails, and frozen cocktails, facilitate shock cooling of dishes, food transport, and blending smoothies and cold sauces. They should be stored in airtight trays or plastic bags in the freezer, protecting them from absorbing odors and refreezing after thawing; regular cleaning of containers prevents residue buildup and improves taste.
