Description
Lovage has a distinctive, intensely parsley-celery aroma with a slight hint of cumin; fresh leaves are light green and delicate, while dried ones darken and become more concentrated in flavor. It contains vitamins A and C, B vitamins, minerals such as iron and potassium, as well as fiber and essential oils that support digestion and have mild anti-inflammatory and diuretic effects, aiding the overall balance of the body. Lovage pairs perfectly with broths, vegetable and meat soups, fillings, braised meats, eggs, salads, and sauces; fresh adds brightness, while dried enhances the aroma of dishes, so use it sparingly.
