Description

Japanese mayonnaise (Kewpie) is a thick, creamy mayonnaise with a light yellow color, featuring a distinct, slightly sweet and more umami profile than classic mayonnaise, resulting from the use of egg yolks, rice vinegar, and often a small amount of monosodium glutamate. It has a silky texture and a characteristic, intensely aromatic aftertaste that enhances dishes without overpowering them. Nutritionally, it is calorie-dense and rich in fats, especially monounsaturated and polyunsaturated fats, and also provides fat-soluble vitamins (e.g., vitamin E) and choline from egg yolks; for this reason, it is advisable to use it in moderation, taking advantage of its ability to improve the absorption of fat-soluble vitamins. Kewpie pairs wonderfully with sushi, okonomiyaki, takoyaki, salads, sandwiches, sauces and dips, as well as being an ingredient in marinades and dressings.
