Mussels (cleaned, without shells)
Description
Mussels (cleaned, without shells) are characterized by a delicate, slightly salty flavor with a hint of ocean sweetness and a firm, velvety texture; the meat is usually cream-white with a subtle pink tint and aesthetic fragments. They are a low-calorie source of high-quality protein and healthy omega-3 fats, rich in vitamin B12, iron, zinc, selenium, and iodine, which supports the circulatory system, immunity, and proper metabolism and production of red blood cells. Culinary uses of mussels include soups and broths, risottos, paellas, pasta dishes, steamed dishes, fried or grilled in sauces based on wine, garlic, and herbs; they pair well with citrus, parsley, and bread, enhancing the taste of the sea. Store in the refrigerator at 0–4°C and use within 1–2 days; they can be frozen in an airtight container for about 3 months, thawing slowly in the refrigerator and using immediately.
