Molasses
Description
Molasses is a thick, sticky syrup with a deep brown to almost black color and a glossy consistency. Its flavor is intense, sweet-bitter with notes of caramel and slightly smoky tones; it adds a distinct depth and subtle bitterness to dishes that balances sweetness. Molasses provides minerals such as iron, calcium, magnesium, and potassium, as well as small amounts of B vitamins and antioxidants, making it a useful ingredient for supplementing minerals in the diet. In the kitchen, it works well in baking (gingerbread, cookies), glazes and marinades for meats, barbecue sauces, stews, and beverages, where it brings a caramel-molasses aroma. It should be stored in an airtight container in a cool, dark place; once opened, it can be kept in the refrigerator. In case of crystallization, simply heat the jar in a water bath to restore its liquid consistency.
