Ground almonds
Description
Ground almonds have a delicate, slightly sweet flavor with a noticeable nutty note and a creamy, fine-grained texture in a light beige color. They are rich in monounsaturated fats, plant protein, fiber, vitamin E, magnesium, and calcium, with a relatively low carbohydrate content, which supports heart health, blood sugar control, satiety, and antioxidant activity. In the kitchen, ground almonds are perfect for gluten-free baking, macarons, cookies, tarts, and cakes, as a coating, thickener for sauces, or as a base for almond butter and pesto. Store them in an airtight container in a cool, dry place; for longer shelf life, it's best to keep them in the refrigerator (up to several months) or in the freezer (up to a year) and discard them if they have a musty or oily smell indicating rancidity.
