Description
Pollock is a delicate, white fish with firm, slightly scaly skin and a smooth, tender flesh; its flavor is subtly sweet and neutral, making it easy to pair with various spices and sauces. As a lean species, it provides high-quality protein with low fat content and is a source of omega-3 unsaturated fatty acids, vitamin B12, niacin, and selenium, which support heart health, cognitive functions, and muscle recovery. In the kitchen, pollock is great for baking, stewing, grilling, frying in batter, as well as for soups and one-pot dishes; it pairs well with lemon, butter, white wine, and herbs. Store freshness in the refrigerator at a temperature of 0–2°C and use within 24–48 hours, or freeze tightly at −18°C for longer storage; thaw slowly in the refrigerator and do not refreeze.
