French mustard (Dijon)
Description
French Dijon mustard has a smooth, creamy texture and a light brown to golden color, characterized by a sharp, spicy, and peppery flavor with a distinct acidic note resulting from the use of wine or verjuice. It is low in calories and low in fat; in small portions, it provides trace amounts of protein, fiber, and minerals such as selenium and magnesium. The sulfur compounds (isothiocyanates) found in mustard seeds have potential anti-inflammatory and antibacterial effects, and the spice may support digestion and moderately boost metabolism. Dijon pairs well in vinaigrettes, marinades, sauces for meats and fish, as an addition to sandwiches or cheeses, and as a base for aioli or mayonnaise. After opening, store it in the refrigerator in a tightly sealed jar, away from direct light; it usually stays fresh for several months.
