Description
Pęczak, or hulled barley, has a nutty, slightly sweet flavor and creamy-brown, whole grains with a slightly soft texture when cooked. Compared to pearl barley, it retains more bran and nutrients, providing a fuller aroma and a more distinct texture. It is rich in fiber, especially beta-glucans, plant protein, B vitamins, and minerals such as magnesium, phosphorus, and iron, which support digestion, lower cholesterol levels, and help stabilize blood sugar levels. In the kitchen, pęczak pairs well with soups and stews, serves as a base for grain salads, can be used as a substitute for rice or other grains, and is great for risottos, fillings, and grain-based desserts. Store it in a dry, cool, and dark place in an airtight container; with proper storage, it stays fresh for several months to a year.
