Description
Toasted corn kernels, known as cancha, are golden, crunchy pieces with a distinct, slightly nutty flavor and a clumpy texture. They have an intense texture and a pleasant, dry aroma of roasting that perfectly highlights the natural sweetness of corn. As a whole grain product, they provide complex carbohydrates, fiber, a moderate amount of protein, and minerals such as magnesium and phosphorus, as well as antioxidants formed during roasting. They can support satiety, digestion, and energy stabilization throughout the day, although due to their caloric content, it's worth controlling portions. Cancha works great as a snack on its own, an addition to salads, soups, bowls, or dishes inspired by Andean cuisine, as well as a crunchy topping for snacks and tapas. They should be stored in an airtight, dry, and cool place away from moisture, preferably in a closed jar or ziplock bag; under these conditions, they maintain their crunchiness for several weeks.
