Lamb's lettuce
Description
Lamb's lettuce, also known as mâche, is a delicate plant with small, spoon-shaped, intensely green leaves that form rosettes; the taste is mild, slightly nutty and sweet, very pleasant in fresh compositions. It is low in calories, rich in vitamins A, C, and folic acid, contains iron, potassium, fiber, and small amounts of omega-3 fatty acids, as well as antioxidants that support immunity, skin and eye health, and regulate blood pressure and metabolism. In the kitchen, lamb's lettuce pairs wonderfully with citrus fruits, nuts, goat cheese, beets, and smoked salmon, adding lightness to salads, sandwiches, and delicate soups (added at the end). Store it unwashed, wrapped in a paper towel in a perforated package or container in the refrigerator, away from excess moisture; it usually stays fresh for 3–5 days.
