Gorgonzola cheese
Description
Gorgonzola cheese has an intense, creamy-buttery flavor with a distinct spicy, slightly salty note and characteristic blue-green marbling of mold. The texture ranges from soft and melting to more crumbly depending on the ripeness, and the aroma is full and pronounced. Nutritionally, it provides valuable protein, calcium, vitamins A and B12, and fat, including saturated fat, so it should be consumed in moderation; the molds used in aging are safe, but pregnant women should avoid unpasteurized varieties. In the kitchen, gorgonzola pairs wonderfully with salads, nuts, pears, honey, pasta sauces, risottos, and as an addition to pizza and meat dishes, enhancing the flavor of the dishes. It should be stored in a cool place (refrigerator 2–6°C), wrapped in parchment or special cheese paper and in a loosely closed container to prevent it from absorbing odors; before serving, it is advisable to take it out for a few minutes to soften the texture and bring out the flavor.
