Description
Cornstarch is a fine, white powder with a neutral taste and a silky, opaque consistency when dispersed. Nutritionally, it is almost pure carbohydrate, virtually devoid of protein and fat, and gluten-free, which is why it is used as a substitute for flour in gluten-free diets; however, it should be used in moderation due to its high glycemic load. After cooking and cooling, some of the starch may convert to resistant starch, which benefits gut microbiota. In the kitchen, it serves as an effective thickening agent for sauces, soups, creams, and fillings, providing a clear shine and smooth texture; it is also used for breading and baking as an additive that improves flakiness. Store in a tightly sealed container in a dry, cool place, away from moisture and strong odors; it is recommended to use within 12–24 months.
