Chicken wings
Description
Chicken wings are small, attractive pieces with a crispy skin when baked or fried and juicy, tender meat by the bone; when raw, they have a light pink color and a characteristic rounded shape with two segments. They have a versatile flavor, absorbing marinades and spices well, making them great in spicy, sweet-spicy, or herb versions. Nutritionally, wings provide valuable protein and B vitamins (especially niacin and B6) as well as minerals like selenium and phosphorus; they contain moderate amounts of fat, which increases the calorie content, especially in the skin, so they can be made lighter by removing the skin. Typical uses include grilling, baking, deep frying, braising, and making broths; they pair well with spicy sauces, honey-mustard glazes, and beer marinades. They should be stored in the refrigerator for 1–2 days when raw and 3–4 days after cooking, and for longer storage, freeze in an airtight container for about 6 months; thaw in the refrigerator and avoid cross-contamination.
