Elderflower syrup
Description
Elderflower syrup has a delicate, floral-citrus aroma with a hint of honey and vanilla, a clear amber color, and a thick, sticky consistency that easily dissolves in drinks. Nutritionally, it is primarily a concentrated source of simple sugars and calories, but it also contains trace amounts of vitamin C as well as phenolic compounds and flavonoids that exhibit antioxidant properties; it has traditionally been used as a remedy to alleviate cold symptoms and support respiratory comfort. In the kitchen, elderflower syrup is suitable for lemonades, cocktails, desserts, dressings, and marinades, as well as an addition to mousses or yogurts, imparting a subtle floral note to dishes. It should be stored in a tightly sealed, preferably dark bottle in a cool place; once opened, keep it in the refrigerator and use within a few months, and for longer storage, portion and freeze.
